Dock Spaces is an excellent tool for Mac OS X Leopard that lets you use up to 10 different custom docks, each with the icons you choose. You can also customize their behavior in your system preferences.
To change docks you can use the program's icon on the menu bar, or set up a keyboard shortcut with Cmd+number of dock.
With Dock Spaces you can also use a different dock for each space, although this only works with up to four of them. Access the program preferences in order to assign a dock to a specific desktop.
Other features in Dock Spaces let you: stop icons from bouncing; lock a dock's content; change its position, style, and alignment (2D or 3D); and automatically display or hide the entire dock.
